Combine all of the above, add as much smashed garlic as you would like, and bring to boil. Let it stand for a few minutes to extract all the flavors, and pour over the peeled and cut beets while it’s piping hot. Put lid on as soon as you can, and let it stand until it comes to room temp before refrigerating. Use heat proof container! This would make enough solution for 2-3# of beets. Keeps great in the fridge!
